A common question from users is, “Is green tea blended?” Simply answering “Yes, it is blended” might not convey the significance of blending, so I also aim to explain the intent and importance of blending.
In the Japanese tea industry, the blending of green tea is referred to as “gouzu.”
Gouzu is an essential process in green tea production that requires a deep understanding of tea and extensive experience.
For tea enthusiasts, there might be a favorite tea from a particular garden that they always purchase. Many tea shops have a signature tea that represents their brand, similar to “teplo green 2021” for teplo. Some tea shops offer a variety of teas based on characteristics like umami or aroma, and also based on price. These signature blends are created through the art of gouzu, where different tea leaves with varying origins, cultivars, harvest times, and steaming methods are carefully blended.
Such signature blends usually offer a consistent taste, regardless of when you buy them. Since tea is an agricultural product and no two harvests are exactly the same, the consistency in flavor is achieved through skillful gouzu that assesses and blends various tea leaves.
Gouzu is not about mixing cheap tea leaves to bulk up the product; rather, it is an essential technique for delivering delicious and consistently high-quality tea. It may be similar to whiskey blending in that regard. I will address the question “Is blending done for teas other than green tea?” in a future discussion.
