Related to the first tip, it’s important to use water at the highest possible temperature for brewing. After warming your cup, place the tea bag in it and pour in the hottest water you can.

Tip 3: Cover the Cup While Brewing

If your tea cup has a saucer, use it as a lid to cover the cup while the tea is brewing. During brewing, it’s more important to cover the cup and keep the temperature steady than to stir the tea bag. After brewing for 1-2 minutes with the cover on, remove the cover and gently agitate the tea bag a few times to achieve a nice color.

Tip 4: Do Not Squeeze the Tea Bag

You might be tempted to squeeze the tea bag with a spoon when removing it, but resist that urge. Squeezing the tea bag can release tannins and other compounds that make the tea bitter and spoil the flavor balance. Gently lift the tea bag out of the cup. Also, avoid leaving the tea bag in the cup for too long, as it can increase bitterness. Remove the tea bag after 1-2 minutes of brewing.
