Characteristics of Lapsang Souchong
Lapsang Souchong is produced in the Wuyi Mountain region of China’s Fujian province. The distinctive feature of this tea is its highly unique smoky aroma, which is achieved by drying the tea leaves over burning pinewood.
Origin of the Smoky Aroma
The smoky aroma of Lapsang Souchong was originally a result of an accident. During the drying process, the smoke from the burning pinewood permeated the tea leaves, giving them a smoky flavor. This method was later intentionally adopted and became a key characteristic of Lapsang Souchong.

In addition to the smoky aroma, Lapsang Souchong also has another important fragrance known as the « longan » aroma. The sweetness and fruity scent of longan are reminiscent of litchi and peach, which comes from the tea leaves themselves, not from the pine smoke. How Earl Grey Tea Was Created
The creation of Earl Grey tea is closely linked to Lapsang Souchong. In 19th century England, attempts were made to replicate the longan-like aroma of Lapsang Souchong’s tea leaves. However, since longan was not available in England, bergamot was used as a substitute.
Bergamot, whose citrusy aroma is not the same as longan, paired wonderfully with tea. This led to the creation of a flavored tea using bergamot, which became known as « Earl Grey. »
Personally, I initially found it difficult to understand the connection between Lapsang Souchong, known for its smoky aroma, and Earl Grey, famous for its citrusy fragrance. However, upon closer examination, I realized that the fruity aroma of longan inherent in Lapsang Souchong’s tea leaves serves as a bridge, leading towards the addition of fruity flavors.
How to Enjoy Lapsang Souchong
Lapsang Souchong is typically enjoyed straight, but pairing it with smoked foods like smoked salmon or cheddar cheese can enhance its flavor. It also pairs wonderfully with chocolate. The combination of smoky tea and chocolate offers a somewhat refined chocolate experience. For those who enjoy the smoky aroma of whiskey, choosing Lapsang Souchong during a night without alcohol can be a pleasant alternative.
