Lastly, here’s a little tidbit about lemon tea. When you add lemon to tea, you may notice that the color becomes slightly lighter. This color change is due to a substance in tea called theaflavins, which are responsible for the red color of tea. Theaflavins have the property of being red when the tea is neutral, but they become lighter in color when the tea becomes acidic. The citric acid in lemon makes the tea acidic, which is why the color lightens.<\/p>
